Gear 'em up!

Running 

/npc edit equipment
will put you in equipment editor mode.

You now have have the following options * Right click NPC to equip them the item you're holding * Punch it to swap its hand items * Shift-right-click to put a piece equipment * Shift-right-click with empty hand clear equipment

If you want them to drop equipment on death (not removal), run 

/npc edit equipment allowEquipmentDrops true
